What is Good Coffee?
How long is a piece of string?
You see coffee is so entwined into our life that it actually evokes more emotion than we probably think. If you were to ask the next person you see what the best coffee they’ve ever had was, they will probably have a story to go with it. One of the best coffees I’ve had was in Tanzania sitting on a hotel balcony after a busy day at a conference. We were looking down at the fenced in courtyard watching the resident turtles walking around. I don’t actually remember what coffee we were drinking. I know we used an old kettle that made the water taste like it had been filtered through an old boot. But, to this day I remember it fondly because of the experience.
In saying all this, you can turn a good morning coffee into a great morning coffee by using high quality, freshly roasted coffee, ground to the right size, filtered water, at the right temperature, with the right amount of contact time. But that’s for another post or three…

P.S. The equipment – or brew method – you choose plays a big part in how you like your coffee. Do you prefer lots of body or mouthfeel or clarity of flavour or a good mix of the two? in future posts i will examine the features of various brew methods.
